Same ingredients are used to elaborate this product, but is stuffed in cattle beef casing, keeping the traditional flavor of our Iberian salchichon.  In this case we package it in vacuum into individual package.

Same ingredients are used to elaborate this product, but is stuffed in cattle beef casing, keeping the traditional flavor of our Iberian salchichon.  In this case we package it in vacuum into individual package.

Elaboration

After the selection of the Iberian lean pork, the meat is minced and marinated with our homemade adobo (paprika, salt, garlic and oregan). Afterwards we stuff the meat into big natural pork tripes, holding them and drying them in natural driers, where the cure process begins. Afterwords, the pieces are selected taking into account the size and fat of the tripe.
