It is a white ham over 16 months of curing process, in which we add a slightly smoking process. The weight of this ham is about 7-8 kg.

Elaboration

After selecting and put the best pieces of ham, we started a process traditionally soft in salted stack, where each piece is given the right time of salting appropriate to their size and fat formation. Once salting process is over, the pieces are cleaned to take out the surface salt and go through the settlement, in order to get the salt into and take out the water of the surface, under specified conditions of humidity and temperature. Then we keep going to the drying and curing process longer in natural driers and cellar, during this process we obtain the taste and flavor of high quality hamsAll this process must last all the necessary time to assure a curing and tasting optims of each ham appropiate to their size and fat conformation.
