We debone, clean and polish the hams to obtain later halves that are pressed in pear format, they are shipped vacuum packed, obtaining a high performance format for slicing but preserving the appearance and natural shape of the slice. The cutting of this product is recommended to do it by machine. These pieces have a weight of 2.5 to 3kg.

Elaboration

After selecting and conditioning the best fresh hams, we start a process of smooth salting in a traditional way in a pile, where each piece is given the right time for salting, suitable for its size and fat conformation. Once finished, the pieces are washed to eliminate the surface salt and pass to the settlement process, where we get to penetrate the salt slowly and homogeneously and remove the surface water with precise conditions of humidity and temperature.Then we continue with a longer drying and curing process in natural dryers and cellar, during which the aroma and flavor of high quality hams will be developed over time. All this process must last the necessary time to ensure an optimal curing and flavor of each ham according to its size and fat conformation.
