The pastrami is a cured and cooked beef that we elaborate in a traditional way with a double reduction. A process in which by adding less brines and spices, we obtain a meatier product, with a better bite, and much more flavor. It can be consumed hot as it is or used to make sandwiches and sandwiches. It combines very well with cheeses, mayonnaise, pickles, or mustard, among others.
We take whole pieces like the ones we use for our jerky and follow the same initial healing process. Finally they are given a cover of spices and they are baked slowly to finish packing them under vacuum.
