Serrano ham
The curing process of our hams lasts around 16 months, and even more. But what really differentiate them is their flavor and a traditional taste that reminds us of the hams that
were slowly cured in villages after the pig slaughter.
To get this taste and flavor, we follow three rules that make us different from the rest of ham makers:
• Fat hams: fat, both the infiltrated and the external one, is where the taste is. But the fatter the ham, the longer curing time needed.
• Low salt content: we substantially reduce the time in salt in our traditional process, for the flavor of the ham to prevail over the saltiness.
• Slow curing process: It takes time to get quality hams, with their characteristic flavor and taste, no rush. Even more when we are talking about fat hams.
This is the reason why the curing process of our hams takes from 16 months on.

Serrano deboned ham all cleaned half piece
We debone, clean and polish the hams to obtain later halves that are pressed in pear format, they are shipped vacuum packed, obtaining a high performance format for slicing but preserving the appearance and natural shape of the slice. The cutting of this product is recommended to do it by machine. These pieces have a weight of 2.5 to 3kg.g.

Our ham has been deboned, cleaned and polished, in which we apply a soft press process in order to mould it in pear shape for a better consumption. A high-performance of the piece with the advantage that all slices will have the same shape and size. Very useful to slice by machine without wastage.
The weight of this ham is about 5 -6kg.
